Title: Grilled Potato pockets

Ramp this up for more servings or less
for 4 pockets measurements are approx as I never measure anything...  W%

4 medium to large potatoes diced into 1/2" cubes skin and all
1/2c sweet onion diced
4 Tbs olive oil
1/2c diced red/yellow/green sweet pepper (either or color is nice)
1/2c sliced black olives
4 cloves garlic minced
2 Tbs minced green onion
1 Tsp sea salt
1 Tsp fresh cracked pepper
1Tbs fresh minced rosemary
1 cup chopped or grated chedder or blue cheese or whatever you have or like
white wine about 1/2 cup for 4 servings

Mix all the above in a large bowl
Heat Grill or start fire etc

2 pieces of foil about 12-14 long and wide (standard roll width) per serving

drizzle a bit of of olive oil on foil  in middle
Spoon out mix of above until you have 4 portions

pull up sides of foil of one portion
drizzle wine about 1Tbs per portion
Gather 2 opposite sides of foil and roll edges together fold down over until you meet the filling
twist ends of foil tightly

Grill 300-350F for 30 min turning from being on bottom to each side during the 30min.

I do something like this, but I add chicken and carrots also, Call it the "Cowboy Dinner"

Fun! We always called them "hobo pockets" around our campfire :)

We call these "Gut Bombs" in my family
