Tina's tortilla soup

Can do this with any meat - serves 2-4 add or delete more or less.
I used boneless chicken breasts but you can use ground beef or pork of leftover roast etc.

2 chicken breasts boneless skinless
2 tsp Adobo seasoning
1 tsp curry powder
1 small can corn
1 can black beans - drained and rinsed
4 bacon strips diced (I used turkey bacon)
1 large sweet onion diced
4 cloves garlic minced
1 jalepeno minced (optional)
1 Qt/L chicken stock (not broth)
1 large handful tortilla chips per bowl to be served

garnish:
diced cold tomato
diced avocado
grated cheddar cheese

preheat saute pan
pound out or use as is 2 largish boneless breasts
sprinkle with Adobo and curry powder on both sides

Add 2 Tbs Olive oil to pan let it get hot
Brown over medium high heat both sides
remove from pan cut into 1/2" dice
Add back to pan
Add diced uncooked bacon
Saute until browned
Add drained can of corn (or fresh corn)
Saute until corn starts to carmelize
turn off heat add 1/2cup of stock and use spatula to scrape/deglaze anything stuck to the pan

In a soup pot (while chicken is browning)
Medium/high Heat
add 1 Tbs olive oil
Add onions and garlic and saute until clear and slightly browned
Add jalepeno
Add black beans
Add contents of saute pan once cooked
Stir to mix

Add the rest of the 1Qt/L (box)  stock to soup pot
Add water if you want to thin it out.. up to 1 qt/L

Bring to a low boil over medium heat for 5 min or longer stir occasionally
Salt pepper to taste but usually doesn't need anything

Put handful of tortilla chips into bottom of soup bowl
sprinkle chips with a little grated cheddar cheese
Ladle soup over chips
top with more cheese and the cold tomato and avacado

total time about 30 min.

Just handed the recipe off to my wife.  I would try to make it myself, but she never thinks I can do anything right in the kitchen.  If I start on something, she just takes over because "I'm not doing it right!" LOL
