Title: TJ's Potato Pancakes

Since TJ really loved these at the Jam this year here goes.

wash, de-eye, and grate a few potatoes up. I love yukon golds and reds but I use whatever potatoes I have around. . Need about 2 cups of grated potato so use what ever size you have. Its about equivalent to 2 medium fist size potatoes.
1/2c minced sweet onion
1 egg
1 lg clove of garlic smashed then minced
1/2 tsp salt
1/2 tsp dry dill
1/4 tsp fresh ground black pepper
2 tbs flour

Mix all together until all blended.  If you are using a food processor you can just put chunks of potato in and half med onion, clove of garlic plus the rest of the ingredients and pulse it until mushy.  Use a big spoon and drop 1/2c dallops into a hot non-stick skillet with a bit of olive oil and butter. flatten the dallops out a bit, flip when browned. Serve with more butter or apple sauce.  makes 6-8 small pancakes.

YUM Tina, I love potato cakes!!!! Will make these for Friday and Sat.
